Dans le secteur du saumon fum\u00e9, la texture en bouche, le moelleux, la fermet\u00e9 ou encore la sensation grasse sont des crit\u00e8res d\u00e9terminants pour la satisfaction du consommateur. Pourtant, ces propri\u00e9t\u00e9s restent difficiles \u00e0 quantifier objectivement, car elles font traditionnellement appel \u00e0 des panels sensoriels co\u00fbteux et subjectifs.<\/p>\n<\/div><\/div>\n<\/div>\n\n<div class=\"et_pb_column_1 et_pb_column et-last-child et_flex_column et_pb_css_mix_blend_mode_passthrough et_flex_column_18_24 et_flex_column_18_24_tablet et_flex_column_24_24_phone usecase-right-col\">\n<div class=\"et_pb_cta_0 et_pb_promo et_pb_bg_layout_light et_pb_module et_flex_module usecase-intro\"><div class=\"et_pb_promo_description\"><div class=\"et_pb_promo_content\"><p>Cette \u00e9tude propose une approche instrumentale combinant rh\u00e9ologie et tribologie pour \u00e9tablir un benchmark quantitatif des propri\u00e9t\u00e9s sensorielles de cinq saumons fum\u00e9s. L'objectif est de corr\u00e9ler des grandeurs physiques mesurables, propri\u00e9t\u00e9s visco\u00e9lastiques, m\u00e9caniques et frictionnelles,  aux descripteurs sensoriels per\u00e7us lors de la mastication, et de positionner chaque produit de fa\u00e7on objective sur une carte comparative.<\/p>\n<\/div><\/div><\/div>\n\n<div class=\"et_pb_cta_1 et_pb_promo et_pb_bg_layout_light et_pb_module et_flex_module usecase-paragraph\"><div class=\"et_pb_promo_description\"><h2 class=\"et_pb_module_header\">Comment quantifier la sensation en bouche de produits alimentaires ? <\/h2><div class=\"et_pb_promo_content\"><p>Pour \u00e9valuer les propri\u00e9t\u00e9s sensorielles d'\u00e9chantillons (texture en bouche, moelleux, lubrifiant), il faut chercher \u00e0 corr\u00e9ler ces propri\u00e9t\u00e9s \u00e0 des grandeurs physiques mesurables. L'analyse statistique et notamment celle en composantes principales permet de regrouper les principales propri\u00e9t\u00e9s physiques et de positionner les diff\u00e9rents \u00e9chantillons test\u00e9s sur une cartographie.<\/p>\n<\/div><\/div><\/div>\n\n<div class=\"et_pb_cta_2 et_pb_promo et_pb_bg_layout_light et_pb_module et_flex_module usecase-paragraph\"><div class=\"et_pb_promo_description\"><h2 class=\"et_pb_module_header\">R\u00e9sultats<\/h2><div class=\"et_pb_promo_content\"><p>L'analyse statistique en composantes principales permet d'\u00e9tablir les corr\u00e9lations suivantes : Les grandeurs mesur\u00e9es en compression sont bien reli\u00e9es aux propri\u00e9t\u00e9s de duret\u00e9, qui traduisent le moelleux et la fermet\u00e9 des produits. Sur l'autre axe, les propri\u00e9t\u00e9s en cisaillement corr\u00e8lent fortement aux propri\u00e9t\u00e9s ductiles des \u00e9chantillons, caract\u00e9ristiques de leur aptitude au d\u00e9chirement et leur facilit\u00e9 de m\u00e2che (sensation caoutchouteuse). L'\u00e9chantillon 3 pr\u00e9sente une sensation caoutchouteuse marqu\u00e9e, au contraire de l'\u00e9chantillon 4 qui est en outre plus ferme.
