The ability of an emulsion (oil-in-water or water-in-oil) to maintain its homogeneous mechanical structure without separation, sedimentation, or coalescence. Evaluated rheologically using the elastic modulus G', the yield point, and accelerated aging tests. An essential parameter in cosmetics (creams, lotions), food and beverage (mayonnaise, sauces), and pharmaceuticals (injectable emulsions).
