A material that behaves like a “solid” below a critical stress called the yield stress, or flow threshold; and like a “liquid” above it. Examples: mayonnaise, ketchup, toothpaste, fresh cement, cosmetic gels… Accurate measurement of the yield stress is essential for predicting storage stability and behavior during application. Their flow curve is modeled using the Herschel-Bulkley equation.
